Milan Risotto

Melt the butter in a saucepan. Lay out the chopped onion.
Add beef tallow. Saute until the onion is transparent.
Season with salt and pepper.
Add rice. Cook, stirring occasionally, for 5 minutes.
Heat the broth. Pour it into the rice a little while stirring.
Add saffron. Cook the rice, stirring occasionally, until all the liquid is absorbed.
Add Parmesan. Mix.
Risotto Milanese is ready.
