Milan Risotto

Of course, Milanese-style risotto is not rice porridge, but a special Italian rice dish – in meat broth, with fried onions and cheese.

Ingredients

  • Round rice (starchy varieties) – 150 g
  • Beef broth – 600 g
  • Grated Parmesan – 100 g
  • Onions (chopped) – 0.5-1 pcs.
  • Salt
  • Pepper
  • Saffron
  • Butter – 50-60 g
  • Beef fat – 20-30 g

Directions

  1. Melt the butter in a saucepan. Lay out the chopped onion.
  2. Add beef tallow. Saute until the onion is transparent.
  3. Season with salt and pepper.
  4. Add rice. Cook, stirring occasionally, for 5 minutes.
  5. Heat the broth. Pour it into the rice a little while stirring.
  6. Add saffron. Cook the rice, stirring occasionally, until all the liquid is absorbed.
  7. Add Parmesan. Mix.
  8. Risotto Milanese is ready.
