Ingredients

  • 1 kg potato (s)
  • 3 ½ dl flour (barley flour
  • 3 ½ dl wheat flour, possibly whole grain
  • 1 tablespoon salt
  • a lot salt water, strong
  • 300 g bacon or diced ham, possibly more
  • Jam (cranberry jam)
  • some butter
  • milk

Instructions

  1. Peel the potatoes and grate them finely. Knead the finely grated potatoes with the barley and wheat flour and the salt to form a firm dough.
  2. Shape the dough into 10-15 dumplings using a spoon and / or your hands. As a variant, you can also work ham cubes in the middle of each dumpling. It is best to keep dipping your hands in cold water to prevent the dough from sticking. Put the dumplings in a large saucepan with plenty of boiling salted water (approx. 1 teaspoon of salt per liter of water) and cook for 45 minutes.
  3. Traditionally fried bacon and cranberry jam are eaten with this North Swedish meal. When serving, you add a little butter to the dumplings and ice-cold milk is served as a drink.
  4. A traditional recipe from northern Sweden, which used to be particularly popular with forest workers, as it really fills you up even after hard work. Also called Pitepalt because it supposedly comes from Piteå.
