Ingredients

  • 2 ½ kg quark (low-fat quark)
  • 5 egg yolks
  • 500 g suar
  • 500 g butter, soft
  • 2 vanilla pods, which the pulp
  • 200 g almond (s), chopped
  • 50 g almond (s), peeled, whole

Instructions

  1. Wrap the low-fat quark in a tea towel or diaper. Place in a large sieve and let hang over a bowl overnight to drain (in the country of origin of this dish, in Russia, there are specially prepared wooden molds for this).
  2. It is very important that the quark mass contains as little water as possible, this makes the food easier to cut later.
  3. Beat the sugar and egg yolks, add the butter. Then add the quark, vanilla pulp and chopped almonds. Mix everything together properly.
  4. The result must be a viscous mass, from which a small pyramid can be formed with a smooth knife or dough scraper (approx. 20 cm x 20 cm x 20 cm), which is served on a flat plate. The pyramid can now be garnished with a few whole, peeled almonds.
  5. The best thing to do is to refrigerate the pas`cha for a few more hours so that the consistency continues to solidify.
  6. It is served in small portions, as the food is very high in calories.
  7. Pas`cha is a Russian Easter food. In Russia, this traditional dish is carried to the Russian Orthodox Church on Easter Sunday morning, where it is blessed by the priest and eaten solemnly at home.
  8. Variation on the dehydration of the quark: The dehydration of the quark in the manner described above (and the subsequent strength of the pyramid associated with it) is usually not enough for me.
  9. I either use my muscles to squeeze the curd, which is well wrapped in tea towels, several times over a strainer. This is quite exhausting at times. Or I beat the quark in 2 layers of tea towels, which I knot very tightly. Really very firm.
  10. Then this whole ball goes into the washing machine and is carefully spun for a few minutes (5-10 minutes should be sufficient) in the normal spin cycle under observation. Really careful, as the knots on the towels must not come loose (if they do, there is a risk that all of the quark will be distributed inside the drum, and we want to avoid that)! In addition, this heavy ball means a lot of work for the washing machine.
  11. If you do the whole thing carefully and under observation, nothing should really happen. Any well-damped washing machine should actually handle the stresses caused by the imbalance that occurs without any problems.
  12. It is best to put a few more towels or similar in the machine right at the beginning to reduce the resulting imbalance and to make the quark / towel ball less dancing in the drum.
  13. If the imbalance is still too great, then please stop, the load on the machine could be too great.
  14. Conclusion: I`ve been draining curd in this way for years, and so far there has never been a misfortune.
