Ingredients

  • 500 g pasta (macaroni)
  • 6 tablespoon butter
  • 1 egg white, beaten until stiff
  • 9 tablespoon parmesan, grated
  • 1 small onion (s), diced
  • 500 g minced meat, mixed
  • 2 teaspoons salt
  • 2 pinches pepper
  • 0.5 stick ½ cinnamon
  • liter ⅛ white wine, dry
  • 2 tablespoon tomato paste
  • liter ⅛ meat broth
  • 5 tablespoon breadcrumbs, heaped
  • 3 tablespoon flour
  • 1 egg yolk
  • 1 tablespoon heavy cream
  • 0.38 liters water

Instructions

  1. Boil the macaroni, toss in 1 tablespoon of butter. Mix the egg whites with 2 tablespoons of Parmesan, fold into the macaroni. Spread the baking dish with 1 tablespoon butter, sprinkle with 2 tablespoon breadcrumbs. Spread half of the macaroni in it. Fry the onion cubes in 1 tablespoon butter, add the minced meat, fry. Simmer with 1 teaspoon salt, 1 pinch of pepper, cinnamon stick, white wine, tomato paste and broth in an open pan until a thick mixture is formed. Remove the cinnamon stick again. Mix in 1 tablespoon of breadcrumbs and 2 tablespoons of Parmesan, pour over the macaroni in the baking dish, spread the remaining macaroni over the top.
  2. For the sauce, melt 2 tablespoons of butter, dust in the flour while stirring and fry until light yellow, gradually pour in water, add 1 teaspoon of salt and 1 pinch of pepper. Cook for 5 minutes, stirring constantly. Add 3 tablespoons of parmesan, whisk the egg yolks with the cream, stir 2 tablespoons of the hot sauce into the egg yolk mixture, then stir this into the hot sauce (do not let it boil anymore!). Pour the sauce over the casserole, sprinkle with 2 tablespoons of parmesan and 2 tablespoons of breadcrumbs. Spread 1 tablespoon butter on top, bake at 200 ° C for 40 minutes on the middle rack.
  3. Goes well with: tomato salad.
