- 2 small pear (s), not too ripe
- 3 egg (s), size L, separated
- 100 grams flour
- 4 tablespoon sugar
- 1 packet vanilla sugar
- 100 ml milk
- 4 tablespoon butter
- 1 pinch (s) salt

- Sift the flour and mix well with the milk, vanilla sugar, egg yolks and salt with a whisk. Then beat the egg whites with 2 tablespoons of granulated sugar as stiff as possible and carefully fold into the dough.
- Heat the butter in an ovenproof pan, if possible with a coated pan. Spread 1 tablespoon of sugar in the pan, let it melt briefly in the butter and pour in the egg mixture. Scatter the pears, peeled and cut into small cubes.
- Bake in the preheated oven at 150 ° C (convection) on the middle rack for about 15 minutes. Take out of the oven, cut in half and turn the halves.
- Carefully tear into small pieces with two spoons on the stove while continuing to fry over low heat. Place on a platter and sprinkle with powdered sugar, serve with cranberries.
