Ingredients

For the caramel:

  • 100 g suar
  • 2 tablespoon water

For the pudding:

  • 12 egg (s)
  • 1 liter milk
  • 350 grams sugar
  • 1 lemon (s), grated zest
  • 1 glass port wine or brandy (glass means a shot glass)

Instructions

  1. Put the eggs with the sugar in a bowl and stir with the hand mixer. Then add the milk, the grated lemon zest and the port or brandy. Mix everything well with the hand mixer.
  2. Then you make the caramel sauce: add 100 g sugar and 2 tablespoons of water to a stainless steel saucepan and slowly melt the sugar over low heat. Let the sugar caramelize until golden brown. Important: DO NOT stir.
  3. When the desired color is achieved, continue processing the caramel immediately. To do this, line the bottom and the edge of a large pudding mold with the homemade caramel, pour the pudding cream into the mold and cook in a water bath for about 45 minutes.
  4. Then let it cool down and turn it out onto a large plate or cake platter.
