Ingredients

  • 250 g spahetti

For the sauce:

  • 2 teaspoons, heaped tahini (tahini, sesame paste)
  • 1 teaspoon soy sauce, light
  • 1 teaspoon soy sauce, dark
  • 0.75 teaspoon ¾ vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon chilli oil
  • 2 teaspoons chili paste, red
  • 2 tablespoon water, warm

Also:

  • 2 spring onion (s)
  • 4 teaspoon sesame seeds

Instructions

  1. Re Gan Mian are a traditional dish from Wuhan in central China. It is traditionally a breakfast dish, but tastes good at any time of the day. Literally translated it means spicy, dry noodles and the name says it all. There are different methods of preparation, the recipe most closely resembles that of the old woman who lived around the corner from me at the time and who sold the Re Gan Mian on the street that morning. Jianmian was used as noodles there, but it tastes just as good with simple spaghetti and they are much easier to get in Germany.
  2. Cook the spaghetti.
  3. Meanwhile prepare the sauce:
  4. Mix the tahini (neatly heaped teaspoon), soy sauces, vinegar, sugar, sesame oil and chili oil. Then mix in 2 - 3 teaspoons of chili paste to taste (it should be so hot that you can just tolerate the pure sauce on your tongue without pain), then add a shot of warm water (approx. 1 - 2 tablespoon) and mix well . The result should be a thick paste / sauce.
  5. Pour the sauce over the pasta. Top with spring onions and sesame seeds as desired. Depending on the district, carrots or cucumber cut into strips are also served.
