Ingredients

  • 1 kg potato (s), small
  • 1 tablespoon clarified butter
  • 1 teaspoon salt
  • Black pepper from the mill
  • Paprika powder

Instructions

  1. Do not finish cooking the potatoes with the peel as jacket potatoes.
  2. I like to do this in a pressure cooker: cook for 5 minutes at the pressure reached, then take it off the stove and let it cool down. Let the potatoes cool down a little and peel them. If you don`t want to do the work with the small potatoes, you can leave the peel on. But then please brush thoroughly before cooking!
  3. Heat the clarified butter in a pan (which is best coated) (medium heat). Add the potatoes and fry slowly for about 20-30 minutes, shaking the pan repeatedly so that the potatoes turn golden yellow and crispy on all sides. This is where the name Rumbled comes from! 5 minutes before the end of the cooking time, season the potatoes with salt, pepper and paprika and serve in the pan.
  4. We like these potatoes with grilled and pan-fried foods and with everything that goes well with bearded potatoes. By the way, you can vary this recipe depending on your taste and season it with rosemary, thyme, caraway or Spanish smoked paprika powder. The potatoes are also very fine if you sprinkle them with a little sugar just before serving and let it caramelize in the pan!
