Ingredients
- 4 apples
- 2 red pepper (s)
- 1 small cucumber (s)
- 1 clove garlic
- 1 tablespoon butter
- 750 ml meat stock, hot
- Salt and pepper, freshly ground
- 1 teaspoon sugar
- 0.5 teaspoon ½ paprika, hot pink
- 100 g cream

- Wash the apples and rub dry. quarter, core and finely dice them. Wash the pods and cucumber, rub dry, quarter, core and dice. Peel the garlic clove.
- Press the butter, garlic through a press, add the apple, pepper and cucumber cubes and simmer for about 5 to 10 minutes until soft.
- Pour the hot meat stock over the vegetables. Let the whole boil for about 5 minutes and then puree with a hand mixer. Season the soup with salt, pepper, sugar and paprika powder. Pour in the cream and bring to the boil again.
