Ingredients

  • 4 apples
  • 2 red pepper (s)
  • 1 small cucumber (s)
  • 1 clove garlic
  • 1 tablespoon butter
  • 750 ml meat stock, hot
  • Salt and pepper, freshly ground
  • 1 teaspoon sugar
  • 0.5 teaspoon ½ paprika, hot pink
  • 100 g cream

Instructions

  1. Wash the apples and rub dry. quarter, core and finely dice them. Wash the pods and cucumber, rub dry, quarter, core and dice. Peel the garlic clove.
  2. Press the butter, garlic through a press, add the apple, pepper and cucumber cubes and simmer for about 5 to 10 minutes until soft.
  3. Pour the hot meat stock over the vegetables. Let the whole boil for about 5 minutes and then puree with a hand mixer. Season the soup with salt, pepper, sugar and paprika powder. Pour in the cream and bring to the boil again.
