Ingredients

  • 400 g radish (s)
  • 1 bunch radishes
  • 1 cucumber (s)
  • 1 bunch herbs for green sauce
  • 1 onion (s)
  • 1 bunch spring onion (s)
  • 2 tablespoon mustard, medium hot
  • 10 tablespoon oil, neutral
  • 4 tablespoon white wine vinegar or sherry vinegar
  • salt and pepper
  • 400 g poultry sausae

Instructions

  1. Peel the radish and cut into fine slices. Put a good pinch of salt in a sieve and let it steep for 15-20 minutes.
  2. Thinly slice the cucumber, sausage and radishes and mix in a bowl. Cut the onions and spring onions into fine rings, wash and sort the herbs, finely chop the large leaves and chop.
  3. Prepare a vinaigrette from vinegar, oil, mustard and half of the herbs and whisk with a hand blender.
  4. Rinse the radish under water and add the other half of the herbs to the other ingredients. Pour the vinaigrette over the salad and mix well. Let it steep for 20 minutes.
