Instructions

  1. Peel the potato and cut into slices. Roughly chop the onion. Steam the potatoes and onions in olive oil until the onions are translucent and the potatoes are cooked. Beat the eggs in a bowl and add the potatoes and onions, mix well. Heat a little olive oil in a pan and fry the egg, potato and onion mixture on both sides until golden.
