Ingredients

  • 600 grams flour
  • 40 g yeast
  • 250 ml milk, lukewarm
  • 100 g butter
  • 2 egg (s)
  • 60 g suar
  • 1 pinch (s) salt
  • 0.5 ½ lemon (s), grated zest
  • 1 point vanilla sugar
  • Raisins or almonds for the eyes, nose, mouth, etc.
  • Egg yolk, for brushing

Instructions

  1. Sift the flour into a bowl and make a well. Crumble in the yeast and mix with the lukewarm milk and some flour to form a pre-dough. Cover and let rise in a warm place for 15 minutes.
  2. Melt the butter and work with the eggs, salt, sugar, lemon peel, pre-dough and all of the flour to form a smooth dough. Let rise for another 15 minutes.
  3. Roll out the dough approx. 1 cm thick and cut out / shape wake-up men. Press in the raisins and brush the men with whisked egg yolks. Let rise for another 15 minutes. Preheat the oven to 210 ° C. Bake the wake-up men on the middle sliding bar for 10-15 minutes (hot air approx. 180 ° C, can be baked on all levels)
