Ingredients

  • 100 g rice (wild rice)
  • chicken broth
  • 75 g carrot (s)
  • 20 g walnuts
  • 75 g sprin onion (s)
  • 40 g raisins

For the dressing:

  • 50 ml lemon juice
  • 20 ml olive oil
  • salt and pepper
  • 1 pinch (s) sugar

Instructions

  1. Mix a dressing from the lemon juice, olive oil and the spices.
  2. Rinse the rice and cook in chicken broth for a maximum of 45 minutes. Grate the carrots into fine strips, cut the spring onions into thin rings, and chop the walnuts. Mix the cooled rice with the remaining ingredients and the dressing.
  3. Sprinkle the chopped walnuts on top just before serving, depending on your taste, so they will stay crisp.
