Ingredients

  • 350 g sausae (ham sausae), smoked or meat loaf
  • 1 onion (s)
  • 2 bunches parsley
  • 100 g butter
  • 4 rolls or pretzels from the day before
  • 250 ml milk
  • 250 g flour
  • 5 egg (s)
  • salt and pepper
  • nutmeg

Instructions

  1. Remove the skin from the smoked ham sausage and cut into small cubes. Finely chop the onion and parsley and sauté in the butter in a large pan, add the ham sausage and steam with it. Cut the rolls into cubes and pour the hot milk over them. Mix well with a spoon and let it soak for 30 minutes.
  2. Add the steamed mixture as well as the eggs, flour and spices to the rolls, mix by hand and season to taste. Shape a tangerine-sized button with wet hands, allow to dry a little and cook in a large saucepan with boiling meat stock for about 15 minutes.
  3. Serve the finished sausage knobs in the meat stock or with potato salad and roasted butter onions. A cucumber salad also goes well with it. The leftovers are delicious the next day, sliced, roasted with egg and a fresh lettuce.
