  • 400 g flour
  • 5 egg (s)
  • 0.5 teaspoon ½ salt
  • water, cold
  • 2 onions)
  • some butter
  • 200 g cheese, rated
  • possibly chives
  • possibly salt and pepper

Instructions

  1. Sift the flour into a bowl. Mix in the eggs, salt and water with a wooden spoon. Stir the dough until it bubbles. Cold water may need to be added. Melt the butter in a pan. Peel the onions and cut into rings. Then roast in the butter until light brown.
  2. Bring a large saucepan of salted water to a boil. Press the spaetzle dough into the water through a pasta press (a bit sticky!). Keep stirring with a wooden spoon. When the spaetzle come to the surface, they are done.
  3. Using a slotted spoon, place the first portion in a preheated bowl. Before going in the oven to keep it warm, sprinkle some of the grated cheese over it. Repeat the process until the batter is used up.
  4. Finally sprinkle the onions and some chives over the top. If you like, you can also add salt and pepper.
  5. Green salad always tastes good with it. But can also be served well as a side dish.
