Ingredients

  • 200 g soup noodles (letter noodles)
  • 2 carrot (s)
  • 1 kohlrabi
  • 1 liter vegetable broth
  • 300 g peas, fresh, peeled or frozen
  • 4 tablespoon herbs, mixed, finely chopped, (chervil, flat-leaf parsley, chives)
  • a bit salt
  • some black pepper from the mill
  • some nutmeg, freshly grated

Instructions

  1. Cook the letter noodles in plenty of boiling, lightly salted water until firm to the bite, then drain and drain.
  2. Clean, peel and rinse the carrots and kohlrabi. Cut the carrots into thin slices and the kohlrabi into thin sticks.
  3. Bring the vegetable stock to the boil in a saucepan and cook the carrots and kohlrabi in it for about 10 minutes. Then add the peas and cook for about 5 minutes. Then add the letter noodles and heat them up in the soup. Stir in the herbs and season the soup with a little salt, a few turns of black pepper from the mill and a little freshly grated nutmeg.
  4. Toasted bread slices with herb butter go well with it.
