Ingredients

For the dough:

  • 350 g butter, cold
  • 400 g flour
  • 1 tablespoon sugar
  • a bit salt
  • 1 egg (s)
  • 1 teaspoon lemon juice

For the filling:

  • 1 ½ kg apples, sour (very tasty: Elstar)
  • 2 tablespoon lemon juice
  • 135 grams sugar
  • 135 g suar, brown
  • 1 tablespoon flour
  • 1 teaspoon cinnamon
  • 2 tablespoon butter
  • 1 egg yolk
  • flour for rolling
  • Butter for the mold

Instructions

  1. Cut the butter into pieces, add the flour, sugar and salt and knead into a crumbly mass. Mix together water, egg and lemon juice, add and knead to form a smooth dough. Shape the dough into a ball and place it in the fridge for 1 hour.
  2. For the filling, peel, quarter, core and slice the apples. Immediately drizzle with lemon juice to prevent them from turning brown.
  3. Preheat the oven to 200 °.
  4. Divide the cooled dough into 2 portions, roll each out into a circle with a diameter of approx. 26 cm. Place a circle in the buttered dish, lightly press the bottom and edge. Mix the sugars, flour and cinnamon and mix with the apple slices. Spread the apple mixture on the dough in the mold, spread the butter in flakes on it and place the 2nd circle of dough on top, pressing the edges together. Whisk the egg yolks and spread them on the pastry lid. Prick several times with a knife. Bake for about 1 hour.
  5. Tip: In America people like to eat vanilla ice cream with apple pie, very tasty!
