Ingredients

For the dough:

  • 170 g flour
  • 0.5 teaspoon ½ salt
  • 0.5 teaspoon ½ sugar, white
  • 55 g butter, cold, cut into pieces
  • 50 g fat (fryin fat), cold, in pieces
  • 3 tablespoon water (ice water), possibly a little more

  • 6 tablespoon butter, cold, cut into pieces approx. 1 cm in size

Instructions

  1. For the pie batter, mix the flour, salt, and sugar in a large bowl. Add butter and frying fat. Roughly mix the ingredients with your fingertips. Mix the 3 tablespoons of ice water with the apple cider vinegar in a small bowl and pour over the flour mixture.
  2. Roughly stir the dough with a fork, if necessary add a little more ice water if the dough is too dry. Quickly shape the dough into a ball, then flatten it, wrap it in plastic wrap and refrigerate for 30 minutes.
  3. Place a baking sheet on a grid in the middle of the oven and preheat the oven to 200 ° C (if possible bottom heat, otherwise top / bottom heat).
  4. Take the dough out of the refrigerator and roll it out on a floured work surface into a circle 30 cm in diameter. Place the dough in the mold. Push the protruding ends of the dough under the edge of the dough and dent the thicker edge created with your fingers. Put the mold in the refrigerator while the filling is being prepared.
  5. For the filling, peel, quarter and core the apples, cut into 1 cm thick slices and place in a large bowl. Add white sugar, flour, cinnamon, nutmeg, allspice and melted butter and mix with the apples.
  6. For the streusel, mix the flour, the two sugar, cinnamon and salt in a blender. Add the cold butter pieces and beat the whole mixture in spurts with the blender until the mixture looks like wet sand.
  7. Assemble the pie. To do this, stir the filling, then place it in the form in the middle of the dough. Spread the sprinkles over and around the apples.
  8. Place the mold on the baking sheet in the oven. Bake the pie for 40 minutes (if the surface turns brown too quickly, cover with aluminum foil). Then reduce the temperature to 175 ° C and bake the pie for another 45 minutes, the apples should be soft and the filling should bubble.
  9. Take the pie out of the oven and let it cool down for about 1 hour. Serve the pie warm with vanilla ice cream and possibly whipped cream.
