Ingredients

  • 150 g flour, if you like, replace half the white flour with wholemeal flour
  • 2 egg (s)
  • 150 ml milk, possibly more or less, depends on the type flour
  • 1 teaspoon Baking powder
  • 0.75 teaspoon ¾ baking soda
  • 3 tablespoon sugar, including a packet vanilla sugar to taste
  • 1 shot rum, rum aroma or other aroma
  • Maple syrup or honey

Instructions

  1. Put all ingredients in a bowl and mix with the hand mixer until a slightly thick dough is formed. It is better to use a little less milk first and then add more if the batter is too firm. If the dough seems too runny, thicken with flour. Let the dough rest for about 15 minutes to soak.
  2. Preheat a relatively small coated pan on the stove over medium heat until the pan is nice and hot. There is no need to use oil or butter for frying. Pour some batter into the pan, brown on one side until air bubbles form in the batter, caused by the baking soda, and the batter has risen. Turn and brown the pancakes.
  3. In total, you get about 5 to 6 thick, typically American pancakes from this amount of dough, but this depends on the pan size.
  4. Stack the pancakes and sprinkle with maple syrup or honey as desired.
