Ingredients

  • 1 kg pork ribs, (thick rib) in one piece
  • 3 tablespoon smoked salt Old Hickory
  • 1 teaspoon allspice
  • 150 ml tomato ketchup
  • 2 tablespoon mustard
  • 1 tablespoon honey
  • 2 tablespoon curry powder
  • 2 tablespoon paprika powder, noble sweet
  • 1 teaspoon paprika powder, hot pink
  • 1 tablespoon thyme
  • 4 cloves garlic
  • some pepper
  • 1 dash olive oil

Instructions

  1. Wash the pork ribs, dry them, rub the smoked salt and marinate in foil for approx. 4 hours, or better overnight, in the refrigerator.
  2. Then cook in a saucepan with water for about 1 hour (until the bones loosen slightly), remove and cut in the middle.
  3. For the marinade, peel and dice the garlic and finely mortar with the thyme and allspice grains. Mix everything together with the olive oil, tomato ketchup, mustard, paprika powder, honey and curry powder. Place the rib on a baking sheet, season with pepper, coat well with the marinade and bake in the oven for 1 hour at 170 degrees. Turn halfway through and brush with the marinade again. Be careful when salting, as the smoked salt still gives off flavor to the meat.
  4. We only ate herb butter baguette with it. If you add baked potatoes and salad, the meat is enough for 4 people.
