Ingredients

  • 1 ½ kg pork ribs (peeled ribs)
  • salt
  • some pepper, whole grains

For the sauce:

  • 1 medium onion (s)
  • 1 clove garlic
  • 2 tablespoon honey
  • 400 ml spice ketchup from Hela (shashlik)
  • salt
  • a lot paprika powder, noble sweet
  • possibly tomato paste
  • olive oil
  • Balsamic vinegar

Instructions

  1. Cut pork ribs into pieces of 2-3 ribs each. Place in a large saucepan, cover with salted water, and add a few peppercorns.
  2. Bring to a boil over medium-high heat, then reduce heat to medium. Simmer for 45-60 minutes until the ribs are cooked through and tender. Drain the water.
  3. While the ribs cook, finely dice onion and crush garlic.
  4. Heat a little oil in a separate pan over medium heat. Add the garlic and onion, cook for 2-3 minutes until softened and fragrant.
  5. Add honey and bring to a boil over medium-high heat. Deglaze with brown balsamic vinegar.
  6. Reduce heat to medium. Add ketchup and season with salt to taste.
  7. Gradually stir in paprika powder until the sauce thickens to the consistency of ketchup, stirring constantly. Optionally add tomato paste (about 1/2 tube) to round out the flavor.
  8. Bring sauce to a boil over medium-high heat if not already boiling. Reduce to medium heat and stir constantly for 2-3 minutes to prevent burning. Remove from heat.
  9. Thickly coat the cooked ribs with the sauce.
  10. Grill over medium-high heat for 5-10 minutes until the sauce is lightly browned, watching carefully to prevent burning.
  11. Serve with any remaining sauce on the side.
