Ingredients

  • 500 g pork (yros), seasoned
  • 1 large onion (s), large
  • 1 zucchini, (about 300g)
  • 2 large mushrooms
  • 250 ml Metaxa
  • 400 g yourt (cream yourt), Greek
  • 100 g feta cheese
  • 1 tablespoon oregano
  • 2 tablespoon mint, fresh
  • 2 tablespoon tomato paste
  • 0.5 teaspoon ½ cinnamon
  • 4 cloves garlic, finely chopped
  • Olive oil, for frying
  • salt and pepper

Instructions

  1. Peel onion, cut in half, then slice into thin strips. Wash zucchini, quarter lengthways, then cut into small pieces. Clean mushrooms, halve them, then slice. Chop fresh mint.
  2. Heat roughly 2-3 tablespoons of olive oil in a large pan over medium-high heat. Add onions and sauté for 3-4 minutes until translucent. Add seasoned pork and cook for 5-7 minutes until browned and cooked through (internal temperature 63°C / 145°F). Deglaze with Metaxa and let reduce for 5-10 minutes.
  3. Add zucchini, mushrooms, and garlic. Add a splash of water if necessary. Simmer over medium heat for 5 minutes.
  4. Stir in yogurt, tomato paste, oregano, cinnamon, and feta cheese. Simmer for 2-3 minutes until feta melts and sauce is well combined. Season with salt and pepper.
  5. Remove from heat and stir in fresh mint.
  6. Serve with lightly toasted flatbread or rice.
