Ingredients

  • 6 roll (s), stale, diced or equivalent amount dumpling bread
  • 200 ml milk
  • 1 onion (s), finely diced
  • 0.5 ½ bunch parsley, finely chopped
  • 1 tablespoon butter
  • salt and pepper
  • nutmeg
  • 2 egg (s)
  • 0.5 ½ lemon (s), grated zest it
  • 125 g ham, cooked, diced
  • possibly breadcrumbs or flour

Instructions

  1. Warm the milk and soak the bread rolls in it. Heat the butter in a pan and sweat the onion in it.
  2. Mix the rolls well. If the mixture is still too dry, add more milk and let it soak. Mix the onions, parsley, eggs, lemon zest and ham with the breadcrumbs. If the dumpling dough is too soft, add breadcrumbs or some flour. Season with salt, pepper and nutmeg.
  3. Then shape about 12 dumplings and cook in boiling salted water for about 20 minutes. Take out and drain. Tastes good with creamed mushrooms.
