Preheat the oven to 200 ° C. Either grease the wells of a 12-cup muffin pan and dust with flour or work with 12 paper cases.
Melt the butter in a small saucepan on medium heat. Mix the flour, sugar, cinnamon, vanilla sugar, baking powder and salt in a mixing bowl. Mix eggs, milk and melted butter in a second bowl. Add the egg mixture to the flour mixture and stir everything briefly with the whisk of the hand mixer.
Peel the apple and carrots, grate them coarsely on the kitchen grater and mix into the batter. Finally add the coconut flakes.
Use a tablespoon to fill the dough no more than three quarters high into the recesses of the muffin pan. Bake the pan on the middle rack for about 25 minutes.
They`re perfect when they rip open on top.
