Ingredients

  • 750 g apples, sour, e.. Boskoop, Cox Orane
  • 250 grams sugar
  • 200 ml apple juice
  • 4 egg (s)
  • 300 grams flour
  • 150 ml oil (sunflower)
  • 2 packs vanilla sugar
  • 1 packet baking powder
  • 0.5 teaspoon ½ baking soda
  • 400 g sour cream
  • 200 g cream
  • 50 grams sugar
  • 1 teaspoon cinnamon

Instructions

  1. Peel and quarter the apples, cut out the core. Cut the apple quarters into wedges, place in a saucepan and heat with 50 g sugar and the juice, stew for about 8 minutes. Pour apples into a colander, collect the juice, measure 150 ml.
  2. Preheat the oven to 200 °. Cover the baking sheet with baking paper.
  3. Mix the eggs with 200 g sugar until they are white and frothy. Add the flour, apple stock and oil. Stir in vanilla sugar, baking powder and baking soda. Pour the batter onto the baking sheet and spread it on. Spread the apple wedges over the top.
  4. For the topping, mix the sour cream with the cream until smooth and pour over the apples. Mix the sugar with the cinnamon and sprinkle over the topping. Bake the cake in the oven (center, convection: 175 °) for 25-30 minutes until the surface is lightly browned. Take out of the oven and let cool on the baking sheet.
