Ingredients
For the dough:
- 400 g flour
- 1 cube yeast
- 200 ml milk, lukewarm
- 50 grams sugar
- 100 g butter, melt
- 0.5 teaspoon ½ salt
For covering:
- 1 ½ kg apples
For the sprinkles:
- 300 grams flour
- 150 grams sugar
- 200 g butter
- Cinnamon, to taste

- For the dough, first mix the yeast with the milk and a little sugar and let stand briefly.
- In the meantime, sieve the flour into a bowl and mix with the sugar. Then add the yeast milk, pull the surface briefly in a circle with a fork and let stand for about 15 minutes.
- Then add the butter and salt and use the dough hook to form a smooth yeast dough.
- Let rise in a warm place or in a warm water bath for about 45 minutes.
- In the meantime, peel, quarter and core the apples and cut into thick wedges. Drizzle with a little lemon juice if necessary.
- Line a greased tray with the dough and place the apple wedges on it like scales.
- Let the dough rise again while preparing the crumble.
- To do this, mix the flour and sugar and, if you like, cinnamon in a bowl, add the butter in pieces and slowly knead with the dough hook to make crumbles.
- Spread the crumble on the apples and bake at 200 ° C top / bottom heat for about 30 minutes.
- Tip: It also tastes delicious with brown cane sugar!
- If you like the dough less “yeasty”, it is better to use dry yeast and prepare the dough without pre-dough.
