Ingredients

For the crumbles: (crumble dough)

  • 75 g hazelnuts
  • 225 grams flour
  • 75 g hazelnuts, round
  • 100 g suar, brown
  • 150 g butter

Also:

  • 1 kg apples
  • sugar, brown
  • cinnamon

For the sauce:

  • 1 vanilla pod (s)
  • 600 ml milk
  • 30 g cornstarch
  • 2 egg yolks

Instructions

  1. For the crumble dough, roughly chop the hazelnuts and mix with the dry ingredients. Meanwhile, melt the butter and stir in quickly until a crumbly mixture is formed. Put the streusel in the fridge and prepare the apples.
  2. For the apple layer, peel, core and dice the apples. Then put in a bowl and mix with the sugar and cinnamon. Then place the apple pieces in a baking dish and cover with the crumble. Bake the apple crumble for approx. 35 minutes in a preheated oven at 180 ° C top / bottom heat until crispy.
  3. For the vanilla sauce, cut the vanilla pod in half and scrape out the vanilla pulp with the back of a knife. Remove a little of the milk and stir in the cornstarch and egg yolks well. Bring the milk, sugar, vanilla pulp and vanilla pod to the boil in a saucepan. As soon as the milk boils, quickly stir in the starch mixture. Then bring to the boil again briefly until the milk thickens slightly. Take the vanilla sauce off the stove and take out the vanilla pod. If you like, you can sweeten it with a little sugar.
  4. The apple crumble with hazelnut is a quick and delicious dessert. Doused with warm vanilla sauce, it is perfect for the colder autumn days. This recipe combines the taste components crispy-nutty, creamy-vanilla and fruity-sweet.
