Ingredients

  • 1 medium onion (s)
  • 250 g potato (s)
  • 4 m. Apples
  • 1 tablespoon butter
  • 1 teaspoon, heaped curry
  • 750 ml vegetable stock
  • salt
  • parsley
  • 250 g leeks
  • 1 teaspoon sunflower oil
  • 75 g whipped cream (cream)
  • pepper

Instructions

  1. Dice the onion, potatoes and apples. Sweat the onion in butter, add the potatoes, apples and curry. Pour in the vegetable stock, bring to the boil and simmer for 20 minutes. Finely chop the parsley.
  2. Cut the leek into rings and fry in oil.
  3. Puree the soup, add the whipped cream, pepper and parsley and season to taste.
  4. Add the leek rings to the soup and serve.
