Ingredients

  • 100 g millet
  • 1 teaspoon cinnamon
  • 100 ml milk
  • 100 ml water
  • 4 egg (s), separated
  • 4 tablespoon honey
  • 50 g hazelnuts, round
  • 1 lemon (s), juice and grated zest
  • 400 g apples, sour
  • 10 g butter

Instructions

  1. Bring 100 ml milk and 100 ml water to a boil over medium-high heat.
  2. Add 100 g millet and 1 teaspoon cinnamon to the boiling liquid. Reduce heat to medium and simmer for 8 minutes.
  3. Turn off heat and let the millet soak for 15 minutes. Let cool for 5 minutes.
  4. In a bowl, mix 4 egg yolks with 4 tablespoons honey, 50 g hazelnuts, lemon juice, and grated zest until frothy.
  5. Core and grate 400 g sour apples.
  6. Fold the egg and nut mixture together with the grated apples into the cooled millet.
  7. In a separate bowl, beat 4 egg whites until stiff peaks form. Fold into the millet mixture.
  8. Grease a baking dish with 10 g butter and transfer the millet mixture to it.
  9. Bake in the oven at 175 °C (350 °F) for 25–30 minutes until the surface is golden brown.
