Ingredients

  • 1 bottle apple juice, naturally cloudy
  • 250 ml apple wine (cider), dry
  • 200 ml red wine, dry
  • 60 g rock suar, (Grümmel rock candy or brown)
  • 2 slices ginger, thin
  • 1 stick cinnamon
  • 2 piece (s) star anise
  • 1 apple, (Rubinette or Braeburn)

Instructions

  1. The quantities given are for 4 cups.
  2. Peel the ginger and set aside 2 thin slices.
  3. Put the apple juice with the two slices of ginger, star anise and the cinnamon stick in a saucepan, bring to the boil 1 x and let it steep for about 5 minutes over low heat.
  4. Pour in the cider and red wine, bring to the boil again briefly and season with approx. 60 g of sugar candy. (Grümmel-Kandis is very aromatic and has a slightly caramel-like taste. I can warmly recommend it for hot drinks. It gives honey cake, gingerbread and printen the typical, fine crunch).
  5. Remove the cinnamon stick, star anise and ginger. Do not peel the apple, just halve, quarter and core. Cut an apple quarter into 4 thin wedges and eat the rest of the apple just like that.
  6. Pour the hot apple mulled wine into four glass cups or heat-resistant glasses and place an apple wedge in each and serve hot.
