Ingredients

  • 3 egg (s)
  • 2 tablespoon sugar
  • 1 packet vanilla sugar
  • 0.5 ½ pack baking powder
  • 8 tablespoon flour
  • 100 ml milk
  • 1 apple
  • 1 lime (s)
  • 4 cl calvados
  • 5 teaspoons powdered sugar
  • some sunflower oil for the waffle iron

Instructions

  1. Rub the peel of the half lime and keep the zest ready for later use. Squeeze the lime juice into a bowl of water. Peel and quarter the apple, remove the core and place the pieces in the lime water so that they do not turn brown. Separate the eggs. Beat the egg whites until stiff.
  2. Beat the egg yolks with sugar, vanilla sugar, baking powder and lime zest until frothy. Add the flour and milk, tablespoon at a time. Grate and add the apple. Mix everything together until you have a smooth dough. Mix in the calvados and fold in the egg whites.
  3. Heat up the waffle iron and grease it. Put a large ladle of batter into the waffle iron, close the waffle iron and bake a waffle. Repeat the process until the batter is used up.
  4. Sprinkle the apple pancake waffles with powdered sugar and caramelize the sugar with the gourmet burner.
  5. Arrange and serve.
