Ingredients

For the dough:

  • 1 egg (s)
  • 2 tablespoon butter
  • 75 grams sugar
  • 150 grams flour
  • 60 g almond (s), round
  • 1 teaspoon Baking powder

For the filling:

  • 5 apples
  • 2 egg yolks
  • 2 egg whites
  • 80 g butter
  • 130 g suar
  • 750 g low-fat quark
  • 150 g whipped cream
  • 0.5 ½ lemon (s), juice and zest
  • 40 g cornstarch
  • Flaked almonds

Instructions

  1. Make a shortcrust pastry from the first 6 ingredients, let it rest for 30 minutes while preparing the filling.
  2. Filling:
  3. Beat egg whites until stiff and set aside.
  4. Mix the quark with the egg yolks, melted butter, sugar, cream, lemon juice and lemon zest until creamy. Then stir in the starch. Now carefully fold in the egg whites.
  5. Now brush the baking pan with butter and press in the shortcrust pastry at the bottom and on the sides (prick the base with a fork).
  6. Wash, quarter and core the apples and place on the bottom (only one layer). Then pour the curd mixture over it and smooth it out. At the end, the almond leaves are spread over it.
  7. Bake at approx. 180 ° C for 60 minutes. Avoid opening the oven while baking, otherwise the cake will collapse!
  8. When the cake starts to brown, switch off the oven and leave the cake in for another 15 minutes without opening until the desired degree of browning is achieved.
  9. Now take out of the oven and leave in the mold for 30 minutes to cool. Only then remove it from the mold and let it cool down completely!
