Ingredients

  • 500 g apples, sour
  • 0.25 liter ¼ wine, white (if children eat, use apple juice)
  • 1 stick cinnamon
  • 1 point vanilla sugar
  • 100 g whipped cream (cream)
  • 250 g mascarpone
  • 200 g ladyfiners
  • Pesto :
  • 2 tablespoon powdered sugar
  • 80 g walnuts
  • 1 ½ tablespoon cinnamon, ground

Instructions

  1. Peel and quarter the apples and remove the core. Cut the quarters into wedges and bring to the boil with the wine (apple juice), the cinnamon stick and the vanilla sugar in a saucepan and cook until soft. Let cool down completely.
  2. In the meantime, melt the icing sugar in a pan to form golden caramel. Add the walnuts and roast while stirring. Take out and let cool.
  3. Beat the cream until stiff. Crush the caramelized walnuts with 1/2 tablespoon cinnamon powder in a mortar.
  4. Mix the mascarpone and walnut pesto in a bowl and fold in the cream.
  5. Line a small, rectangular shape with a little mascarpone cream, layer a layer of ladyfingers. Spread half of the apples on top and soak the biscuits with 2-3 tablespoons of the wine brew. Pour half of the mascarpone cream over it and smooth it out. Pour in another layer of biscuits and apples, drizzle some more wine over them and finish with cream. Cover and chill for at least 2 hours.
  6. Sprinkle with the leftover cinnamon powder just before serving.
