Ingredients

  • 200 g suar
  • 125 ml water
  • 4 apples
  • 125 g almond (s) or nuts, whole kernels
  • 2 tablespoon sultanas
  • 1 teaspoon cinnamon powder
  • 1 packet vanilla sugar
  • 1 teaspoon allspice powder
  • 2 egg whites
  • Fat for the shape

Instructions

  1. Peel the apples and remove the cores with a cookie cutter. Then bring the sugar with water to the boil and add the apples. Cook the apples in a closed saucepan for about 10-15 minutes until they are soft.
  2. Remove the apples with a slotted spoon, keeping the remaining syrup. Then mix the sultanas and almonds or nuts, 1 tablespoon sugar syrup (from cooking the apples), allspice, cinnamon and vanilla sugar and fill the apples with them.
  3. Put everything in a greased ovenproof dish. Then beat the egg whites to stiff egg whites and carefully fold in 1 tablespoon of syrup.
  4. Pour the mixture into a piping bag and squirt it onto the apples in a turban shape (hence the name). Gratinate under the m oven grill.
