Mix 400 g flour with 50 g sugar and a pinch of salt in a large bowl. Crumble the yeast and mix with the warm milk until the yeast is liquid. Let the yeast milk rest for 10 minutes.
In the meantime, melt 70 g butter, but don`t let it turn brown. Add the yeast milk, butter and eggs to the flour. Knead everything with the dough hook to a smooth, supple dough. Cover the dough with a cloth and let rise in a warm place for about 1 hour, until it is about twice as big.
Personally, I prefer to prepare the dough in the bread maker. Here, preparation takes about 1 hour 30 minutes, depending on the device.
After the dough has risen, knead it again and roll it out on a greased baking sheet. Let the dough rise again for 15 minutes. Preheat the electric oven to 200 degrees.
For the crumble, put 150 g cold butter, 200 g flour, 120 g sugar, 1 teaspoon cinnamon and a pinch of salt in a bowl. Grate and crumble with your fingertips until you have a medium-sized crumble.
Spread the applesauce on the dough and sprinkle the crumble evenly over it. Bake the cake for about 35 minutes (top / bottom heat). Let the crumble cake cool down and dust with powdered sugar if you like.
