Directions

Cooking the filling. Peel the potatoes, wash them, cut them into several pieces, fill them with water, and cook until tender. At the end of cooking, salt to taste. We drain all the water and turn it into a puree.
Chop the onion finely and fry in vegetable oil until light brown.
Add the minced meat, stirring and dividing it into pieces, fry until the moisture evaporates. Season with salt and pepper to taste.
Cooking béchamel sauce. Fry the flour in a dry frying pan over medium heat for one minute. Add butter and vegetable oil, mix well with a whisk so that there are no lumps.
Pour in milk or cream, continuing to stir. We continue to boil the sauce until thickened. In the end, add spices: salt, black pepper, and nutmeg. Combine the sauce with minced meat and leave to cool completely.
Chop a bunch of parsley finely and add to the minced meat.
Cooking the dough. Add sugar, salt, yeast, vegetable oil, milk to the flour and knead the dough.
First, knead the dough in a bowl, then knead it on the table.
It took me about 60 g of flour to go home. The dough should be slightly softer than on the dumplings. We leave it to rest for 15 minutes.
We form samsa. Divide the dough into four parts. We form a ball from each part.
Combine flour with starch and dust the table with this mixture.
Grease the center of the cake with melted butter and turn the greased side down. For convenience, I made four balls from mashed potatoes. We spread one ball in the center of the cake, flatten it a little, and put the meat filling on top.
We collect the edges of the cake into a knot, twist it.
We lower the so-called “skirt”, straighten the folds.
Fold the folds of the dough down. If there are extra edges of the cake, pinch them off. And thus we form the entire samsa.
Spread on a baking sheet lined with parchment paper. Grease the samsa on top with melted butter. We send it to the oven, preheated to 180 degrees, to an average level, and bake until tender, 20-25 minutes. When the top is well reddened, then the samsa is ready!
Grease the finished samsa with butter and serve.
