Ingredients

  • 4 cucumber (s)
  • 3 tomato (s), preferably Roma
  • 5 spring onions, finely sliced
  • 1 red pepper (s)
  • 45 g arlic, chopped
  • 60 g parsley, chopped
  • 15 g mint, fresh, very finely chopped
  • 120 ml olive oil
  • 2 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon salt
  • 1 tablespoon pepper, freshly ground

Instructions

  1. Finely chop all the herbs, cut the spring onions into fine rings. Core the cucumber, peppers and tomatoes and cut into pieces. I like it a little finer.
  2. Then put all the chopped herbs, the spring onions, the garlic and the chopped cucumbers, tomatoes and peppers in a salad bowl and mix them well. Finally add olive oil and lemon juice as well as salt and pepper and mix well again.
  3. Goes great with falafel or pita bread.
