Ingredients

  • 100 g suar
  • 500 ml water
  • Ginger, fresh, sliced
  • 500 g rhubarb, peeled and cut into pieces
  • 1 lemon (s), untreated, juice and grated zest
  • 1 teaspoon cornstarch (does not have to be)

Instructions

  1. Slowly heat the sugar in 500 ml of water while stirring until it has dissolved. Add the ginger slices and cook until the taste has developed. Remove from the sugar water with a slotted spoon and add the rhubarb pieces. Cook briefly (about 2 minutes). Use the slotted spoon to place the rhubarb pieces in a bowl and reduce the flavored sugar water (if necessary thicken with starch). Add the juice and zest from the lemon peel and stir into the rhubarb. Serve after cooling, with whipped cream if desired.
