Ingredients

  • 150 g rocket
  • 1 red pepper (s)
  • 1 tablespoon almond (s), chopped
  • 8 slices bacon
  • 250 g mushrooms
  • 40 g parmesan, freshly rated

For the dressing:

  • 3 tablespoon balsamic vinegar
  • 1 teaspoon mustard
  • 3 tablespoon olive oil
  • 1 small onion (s), finely diced
  • salt and pepper

Instructions

  1. Clean the rocket. Cut the bell pepper into narrow strips.
  2. Fry the bacon in a coated pan without fat until crispy. Then place on some kitchen paper so that the excess fat can be soaked up. Now cut the mushrooms into slices and fry them well in the bacon fat. Season with salt and pepper.
  3. For the dressing, mix together vinegar, oil, mustard, sugar, salt, pepper and diced onion. It is very important to let the bacon and mushrooms cool. Make the salad just before serving.
  4. Mix the rocket with paprika, almonds, mushrooms and dressing and sprinkle with the fried bacon and the parmesan.
