Ingredients

  • 500 g asparaus, fresh (reen or white) (alternatively pieces in the lass)
  • 1 tablespoon butter
  • 1 teaspoon sugar
  • 300 g puff pastry
  • Salt and pepper, white, a.d. Mill
  • 3 egg (s)
  • 0.25 liter ¼ milk
  • 3 tablespoon parsley, chopped
  • 100 g cheese, rated (e.. Gouda, medium or mountain cheese)
  • 50 g pine nuts
  • Flour for rolling

Instructions

  1. Wash and clean the asparagus, peel and cut into pieces. Bring some water with salt, butter and sugar to the boil, cover and braise the asparagus in it (do not let it get too soft). Drain the asparagus and drain well.
  2. Whisk the eggs with the milk, parsley and cheese, season with pepper.
  3. Roll out the puff pastry thinly on a lightly floured surface, use it to line a large pizza tin (cut off any excess dough).
  4. Fill the puff pastry mold with two thirds of the egg, milk and cheese mixture, spread the asparagus pieces on top and pour in the rest of the mixture. Scatter the pine nuts on top.
  5. Bake in a preheated oven (225 degrees) for about 30 minutes.
