Ingredients

  • 600 g asparaus
  • 150 g cheese (Roquefort), or other blue cheese
  • 1 port. hollandaise sauce
  • 100 g ham
  • salt
  • sugar
  • nutmeg
  • Lemon juice
  • butter

Instructions

  1. Peel the asparagus and cook with salt, sugar, butter and a little lemon juice for 10-15 minutes. Drain, collect the broth.
  2. In the meantime, butter the baking dish. Cover the bottom with 2-3 slices of ham, cut the remaining ham into small pieces. Place the asparagus on top, spread the diced ham between them.
  3. Dice the Roquefort. Heat the sauce and stir in half of the cheese. Season to taste with lemon juice and freshly grated nutmeg. Dilute the sauce with a little asparagus stock and cover the asparagus with it. Finally, spread the rest of the Roquefort on top and bake in the oven at 180 ° C for about 20 minutes.
  4. It goes well with fresh baguette or potatoes and a light white wine.
