Ingredients

  • 250 g asparaus, reen
  • 3 spring onion (s)
  • 2 tablespoons oil or other fat
  • 2 tablespoon lemon juice
  • 1 teaspoon mustard, medium hot
  • 1 tablespoon honey
  • salt and pepper

Instructions

  1. Wash asparagus, peel ends or discard if woody. Cut the asparagus stalks into 3-4 cm long pieces, place the tips separately. Wash the spring onions as well, only use the whites, cut them into rings.
  2. Heat the fat in the pan, melt the honey in it, immediately fry the asparagus (without the tips) and the onions for about 4 minutes. Then add the asparagus tips, season with mustard, lemon juice, pepper and salt and cook until the asparagus is firm to the bite (approx. 10 to 15 minutes in total, longer depending on your taste).
  3. Tastes warm, lukewarm and cold. Can also be mixed with white asparagus.
