In this recipe, I will prepare a tomato appetizer that one of my subscribers highly recommended to me. It is called “Astrakhan-style tomato snack” – tomatoes marinated with garlic and herbs. It is not difficult to prepare, I liked the result. Try it!
Cut the tomatoes into 2 parts and remove the stem from them.
We clean the head of garlic. We cut each clove into large petals.
We cut off the stems of cilantro, and cut the very upper part of the bunch arbitrarily, large enough. We do the same with dill. Please note that we do not throw out the stems. They will still be useful to us.
Take a glass jar (or another suitable dish) and put the cilantro and dill stalks on the very bottom. We crush them so that they start releasing juice and give us as much flavor as possible. Place in a jar 1 bay leaf, 6 black peppercorns and 2 clove inflorescences. We also throw a few garlic petals to the bottom. In my opinion, there is not much of it in this dish.
Let’s go back to tomatoes. Now you need to place 2 petals of garlic in each half of the tomato. One on each side.
The next step is to put the tomatoes in the jar, cut up. We do it in layers. Sprinkle each layer of tomatoes with a little dill and cilantro. Put the next layer of tomatoes on the greens and continue to alternate them with the greens until the jar is full or the tomatoes run out.
Put the remaining bay leaf, cloves and black peppercorns on top of the last layer of tomatoes. If garlic remains, place it on top of the tomatoes as well. With the last, topmost layer, place the remaining greenery in the jar.
Cooking a simple marinade. To do this, put the pan on fire, pour 1 liter of water into it. After boiling, add 2 tablespoon to the water. l. salt and 2 tbsp sugar. Stir them until completely dissolved. Then remove the marinade from the heat. And pour them tomatoes. Add 1 tablespoon on top. l. 6% apple cider vinegar and close the jar with a lid.
We wait until the jar cools down at room temperature, and put it in the refrigerator. After 3 days, the Astrakhan-style tomato snack will be ready.
