Ingredients

  • 0.5 ½ pineapple
  • 1 avocado (s)
  • 1 small onion (s), red
  • 1 handful rocket
  • 1 half orange (s), the juice from it
  • 1 lime (s), the juice it
  • 1 clove garlic
  • 2 tablespoon rapeseed oil
  • 2 tablespoon peanuts, roasted, unsalted
  • 1 pinch cumin
  • Salt and pepper, black, freshly ground

Instructions

  1. Peel the pineapple, remove the stalk and cut the pulp into bite-sized pieces. Divide between two plates. Peel the red onion and cut into rings. Pour over the pineapple. Spread the washed and spun dry rocket on top.
  2. For the dressing, squeeze the orange and the lime. Finely chop the garlic clove and add. Add salts to taste and the cumin. Add the oil and mix everything well.
  3. Pour about half of the dressing over the salad. Then cut the avocado in half, remove the core and peel off the peel. Cut the avocado into wedges and add to the salad. Sprinkle with freshly ground black pepper and the chopped peanuts. Pour the rest of the dressing over it.
  4. You can also use cress instead of rocket. The peanuts can be replaced with cashew nuts.
