Ingredients

  • 2 avocado (s), diced
  • 1 onion (s), red, diced
  • 2 tomato (s), diced
  • 1 clove (s) garlic, finely chopped
  • 4 tablespoon corn, cooked
  • 2 tablespoon parsley, fresh chopped or coriander, finely chopped
  • salt and pepper
  • 0.5 ½ lemon (s), juice from it
  • 0.5 teaspoon ½ chilli flakes, dried or some chopped fresh chili

Instructions

  1. Dice the flesh of 2 avocados, 1 red onion, and 2 tomatoes into small, even cubes. Finely chop 1 garlic clove and 2 tbsp parsley or coriander.
  2. In a bowl, gently combine the avocado, onion, tomato, garlic, 4 tbsp cooked corn, and the chopped herbs. Fold carefully — the avocado should keep its shape, not turn to mush.
  3. Season with the juice of 0.5 lemon, salt, pepper, and 0.5 tsp dried chilli flakes (or some finely chopped fresh chilli). Taste and adjust.
  4. Serve immediately with tortilla chips, warm tortillas, or baguette — the salsa is best within an hour of making, before the avocado darkens.
