Ingredients

  • 700 g zucchini
  • 140 g avocado (s)
  • 150 g tomato (s)
  • 0.5 ½ lemon (n)
  • 1 bunch spring onion (s)
  • salt and pepper

Instructions

  1. For the pasta, use a vegetable peeler or spiral turner to turn the zucchini into pasta. Heat the zucchini noodles in a pan or saucepan over low heat.
  2. Peel the avocado and mix with the lemon juice to a cream. Cut the tomato and spring onion into very small cubes and fold into the pasta with the avocado cream in the pan.
  3. Season to taste with salt and pepper and serve.
