Ingredients

  • 100 g round beef
  • 100 g zucchini
  • 100 g quark (buttermilk quark 0.5% fat)
  • 50 ml vegetable stock, fresh or instant
  • 3 stalks parsley
  • 2 shallot (s)
  • 1 tomato (s)
  • 0.5 ½ bell pepper (s), green
  • 0.5 ½ bunch dill
  • 0.5 ½ bunch chives
  • salt and pepper
  • Thyme, dried
  • oil

Instructions

  1. Peel the shallots, dice one finely, and cut the other into strips. Clean the zucchini and cut into slices. Clean the tomato, cut eighths. Clean, halve and core the peppers, finely dice 1/2 of a pod. Clean and finely chop the dill, chives and parsley.
  2. Knead the mince with 1 tablespoon of quark, diced shallots and diced paprika, season with salt and pepper. Shape it into a minced steak.
  3. Heat the oil in a pan, fry the steak in it for approx. 4 minutes on each side, remove and set aside.
  4. Fry the zucchini and shallot strips in the frying fat for about 3 minutes. Add tomato eighth, pour hot broth over it and simmer for approx. 3 minutes. Season to taste with salt, pepper and thyme.
  5. Mix the remaining quark with the herbs, season with salt and pepper.
  6. Arrange the steak with the vegetables on a plate, add the quark and serve.
