Ingredients

  • 600 g chicken breast fillet (s)
  • 2 point bacon
  • 2 avocado (s)
  • 1 small onion (s)
  • 1 tomato (s)
  • 1 clove garlic
  • 1 teaspoon cream cheese
  • Lemon juice
  • salt
  • pepper

Instructions

  1. For the guacamole, halve and core the avocados. Put the pulp in a bowl and use a fork to crush it into a cream. Stir in the cream cheese and the pressed garlic clove. Season the cream with lemon juice, salt and pepper. Cut the onion and tomato into small pieces and add to the avocado cream. Season again if necessary.
  2. Cut the chicken breast fillets in half. Cut into the cut side to create a pocket. Stuff the chicken with guacamole. Seal the opening with a small skewer. Wrap the filled chicken pieces with bacon.
  3. Sear the chicken pieces wrapped in bacon in a pan on each side and then put them in the oven at 200 degrees for 20 minutes.
  4. The rest of the guacamole can be used as a dip. Homemade rosemary and potato wedges go well with this.
