Instructions

Skim off excess fat from the fried and diced bacon and save 1 tablespoon of it.
Mix the butter with the flour mixed with baking powder, add the egg and stir to a creamy mixture. Then mix in the bacon, cheese and spring onions.
Grease muffin tins with the reserved fat.
Fill the muffin tins 3/4 full with batter and sprinkle with caraway seeds.
Bake in a preheated oven at 200 degrees for 15 to 20 minutes or until golden brown.
Serve hot.
