Ingredients
- 500 g asparaus
- 1 pinch (s) sugar
- 125 ml sweet cream
- 3 egg yolks
- salt
- pepper
- 2 teaspoons lemon juice
- 1 tablespoon white wine
- 20 g ham
- 10 g butter

- Peel the asparagus and cut into pieces. Simmer the asparagus pieces in 3/4 liter salted water with the sugar for 20 minutes.
- Then stir the cream into the asparagus stock. Alloy the soup with the egg yolk and season with white wine.
- Dice the ham and fry it in the butter until crispy. Sprinkle the ham cubes on the soup before serving.
