  • 500 g asparaus
  • 1 pinch (s) sugar
  • 125 ml sweet cream
  • 3 egg yolks
  • salt
  • pepper
  • 2 teaspoons lemon juice
  • 1 tablespoon white wine
  • 20 g ham
  • 10 g butter

Instructions

  1. Peel the asparagus and cut into pieces. Simmer the asparagus pieces in 3/4 liter salted water with the sugar for 20 minutes.
  2. Then stir the cream into the asparagus stock. Alloy the soup with the egg yolk and season with white wine.
  3. Dice the ham and fry it in the butter until crispy. Sprinkle the ham cubes on the soup before serving.
